It all starts in our kitchen with our culinary team. The production process begins by preparing and mixing the ingredients that go into our gourmet products. Our state of the art kitchen is equipped  for roasting, braising, grilling or reducing stocks. The  unique flavors of our fillings are a product of our chefs' dedication to perfectly prepared ingredients:  roasting our garlic, caramelizing our onions and oven-roasting our portabello mushrooms.

Taste is important and so is appearance. Whether single or striped, our dough is made with only the finest durum and eggs. We take pride in the fact that we are among the few pasta makers that can stripe our ravioli. Food coloring is never used. Instead, we use fresh squid ink, tomatoes, and spinach to create the beautiful color combinations that make a presentation as memorable as the flavor.

The U.S. Food and Drug Administration (F.D.A. ) ensures the safety and wholesomeness of almost 80 percent of the United States food supply -  except meat, poultry and some egg products. The U.S. Department of Agriculture  (U.S.D.A.) is responsible for ensuring that the nation's commercial supply of meat, poultry, and egg products is safe, wholesome, and correctly labeled and packaged.

Inspection and criteria are stringent; only the facilities with the highest standards of cleanliness, operating practices and processes attain U.S.D.A. and F.D.A. approval.

How are your products shipped?

 
 

Fresh. Nothing less is acceptable.

Our pastas are flash-frozen immediately after preparation and shipped in insulated foam coolers packed with dry ice. This packaging combination will insure your products arrive frozen and in excellent condition.

 
 

How Many Ravioli Per Pound? How many people does a pound feed ?

 
 


Round Ravioli : 18-20 per lb.
Heart Shaped Ravioli : 45-48 per lb.
Agnolloti (small) : 50-60 per lb.
Agnolloti (large) : 11-13 per lb.
Gnocchi : 70-75 per lb.

One pound will fill 3 plates nicely, but it really all depends on how hungry your guests are!
